The most specific one that fits, such as Dentist, Restaurant or Plumber; schema.org has many subtypes of LocalBusiness. If none fits, LocalBusiness itself is fine.
Does LocalBusiness schema replace a Google Business Profile?
No. The Business Profile is what Maps and the local pack mainly use. Schema on your website confirms the same name, address, phone and hours, which supports consistency.
How do I write opening hours in local business schema?
One line per rule with day codes and 24-hour times, such as Mo-Fr 09:00-17:30 and Sa 10:00-14:00. The generator turns them into openingHoursSpecification for you.
